Shrimp Creole recipe
ingredients
2 tbsp (25 g) 1 oz butter
1 onion, chopped
1 small green pepper, cored, seeded and chopped
3 tbls (25 g) 1 oz flour
400 g (14 oz) canned tomatoes
1 teaspoon dried oregano, basil or mixed herbs
1 teaspoon sugar
salt pepper
2/3 cup (150 ml) 1/4 pt dry white wine
8 oz (225 g) shelled Shrimps
boiled rice to serve

method
1. Melt the butter in a saucepan and fry the onion and green pepper until the onion is softened.

2. Stir in the flour and cook for 2 minutes, then add the tomatoes, herbs, sugar, salt and pepper and mix well.

3. Simmer gently for 15 minutes. Stir in the wine and Shrimps and cook for a further 10 minutes.

4. Serve with boiled rice
